Glazed Ham

1 ham, fresh or canned
1-8 oz can crushed pineapple
1/2 cup brown sugar
1 Tablespoon corn starch
1/2 cup orange juice

combine the brown sugar and corn starch in a saucepan, add the crushed pineapple, undrained, and mix completely. All the orange juice and cook over medium heat until mixture thickens and becomes clear.

Pour mixture over canned ham and cook according to the directions on the can. If you are using a fresh ham, pour mixture over ham about 1 hour before the end of the cooking time.

Cheesy Potatoes

2 lb bag frozen cubed potatoes or the equivelent
fresh, peeled and cubed
2 cups half and half
2 stick butter or margarine
8 oz Velveeta cut in cubes
1 cup shreeded mild chedder Cheese

In a microwave safe sauce pan, place cheeses, butter and half and half. Heat at full power for 3-5 minutes until butter and cheese both melt.

If using fresh potatoes, cover them with water in a large saucepan and bring them to a boil. Let them boil for only about a minute, then drain and run under cold water.

Place potatoes in a large casserole dish or divide into two or three smaller ones (it will make 3 - 1 Quart Casseroles) cover with the cheese sauce. Bake at 350 for about 30-40 minutes.

This makes between 6 and 8 servings. The unbaked casseroles can be frozen for use later.
