Oven Baked Stew

1 Pound prepared stew beef
1/2 Pound baby carrots or 1 cup sliced carrots
3 large potatoes, peeled and sliced
1 medium onion, diced
2 stalks of celery, chopped
1 can Cream of Mushroom Soup
1 bay leaf
Salt to taste

Mix everything together in a dutch oven or a 2 quart casserole with a lid. Place in a 250 F oven and bake for 5 hours, stir occassionally. Serves 2 - 4.

Home Made Bread

I used to bake bread all the time, but now I only do it on very special occasions. It makes a very special treat, warm and fresh from the oven, there is nothing quite like it.

6 - 7 cups white all purpose flour
1/2 cup sugar
2 packages yeast
2 cups warm water
1 Tablespoon salt
2 eggs
1/4 cup vegetable oil

Dissolve yeast and 1 teaspoon of sugar in warm water in large mixing bowl When Yeast starts to bubble, add remaining sugar, salt eggs and 1 cup of flour and mix well, you can use an electric mixer at this point if you wish. Add oil and another cup of flour and mix again. Add enough of the flour to make the dough easy to handle.

Turn dough onto lightly floured surface and knead until smooth and elastic. Now don't be gently with it, take all your frustrations out on it, you can pound it, throw it on the table, anything at all, just don't bounce it off the walls or throw it on the floor. It will be smooth and somewhat silky to the touch when it is done. This may take as much as 10 minutes and be sure to add more flour as you need it. The dough will not stick to your hands when you are done.

Place the dough in a greased bowl and cover and set in a warm place to rise until it is double, This should take 1 - 1 1/2 hours depending on how warm the area is.

Punch the dough down and then divide it in half. Shape each half into a loaf and place in a 9x5x3 inch loaf pan. Cover and let rise again until double. It should top the pans by about 2 inches. Place in a 375 F oven and bake 30 to 35 minutes or until Golden brown.

Baked Apple

2 large apples (Rome Beauties or Jonathans are good)
Brown Sugar
Pepsi

Core the apples and remove the peel from the top section of each apple. Place in a baking dish and fill the core with brown sugar, you can add raisins if you like. Pour the pepsi around the apples and use it to baste during the baking. Bake at 325 F until the apples are tender, basting frequently.
